Chicken Zucchini Noodles

Preparation Time: 10 minutes

Cooking Time: 25 minutes

Servings: 2

Ingredients:

One large zucchini, spiralized

One chicken breast, skinless & boneless

1/2 tbsp jalapeno, minced

Two garlic cloves, minced

1/2 tsp. ginger, minced

1/2 tbsp fish sauce

2 tbsp coconut cream

1/2 tbsp honey

1/2 lime juice

1 tbsp peanut butter

One carrot, chopped

2 tbsp cashews, chopped

1/4 cup fresh cilantro, chopped

1 tbsp olive oil

Pepper

Salt

Directions:

Heat olive oil in a pan over medium-high heat.

Season chicken breast with pepper and salt.

Once the oil is hot, add chicken breast into the pan and cook for 3-4 minutes per side or until cooked.

Remove chicken breast from pan.

Shred chicken breast with a fork and set aside.

In a small bowl, mix peanut butter, jalapeno, garlic, ginger, fish sauce, coconut cream, honey, and lime juice.

Set aside.

In a large mixing bowl, combine spiralized zucchini, carrots, cashews, cilantro, and shredded chicken.

Pour peanut butter mixture over zucchini noodles and toss to combine.

Serve immediately and enjoy it.
